I think I may add Hornindal Kveik and WLPL611 to my list. In less than 3 days it went from a 15 Brix to a 2 BRIX, even at the cooler 57F temperature. That's quite a convenience factor! No sulfur or blue cheese in the S-04 batch. The S-04 in my garage though (around 57F) seems done with primary already, and boy did it floccullate both fast and really well. Coincidence? So, I'm quitting blue cheese until after all this is over. I had been eating some blue cheese lately and I think maybe (?) it somehow infected them, because the 71B did actually smell kinda like blue cheese. Well, the Premier Cuvee and the 71B both turned into sulfur, so down the drain they went.
